Ricotta Gnocchi
In texture these are more like Amish dumplings than Italian potato gnocchiâso soft and delicious. I recommend using the full amount of flour initially to ensure successful gnocchi, but remember, the less flour you use, the lighter and airier the gnocchi. Once you get comfortable with the recipe you can experiment.
INGREDIENTS
2 large organic eggs
1 pound (454 g) ricotta cheese
2 cups (200 g) grated Parmesan cheese
Pinch of nutmeg
Pinch of salt
1 1/2 cups (188 g) all-purpose organic flour, plus more as needed
